CNP Keto Cheesecake

 

I like making things that Dan likes, but watching what we eat is also important. Looking for healthier versions of recipes can be a challenge. We have made this cheesecake a number of times and it is really good. I am not a fan of cheesecake but I really enjoy this one. It is also super easy to make which I love because I am not a baker. We found this recipe online and made a couple changes to suit us.

Instructions
  1. Ensure cream cheese and eggs are room temperature. Let it all sit on the counter
  2. Pre heat oven to 350
  3. Blend Cream Cheese until smooth
  4. Beat in sugar a tablespoon at a time
  5. Beat in one egg at a time, scrap down the sides after each egg
  6. Stir in half and half
  7. Stir in vanilla extract and lemon juice
  8. Beat in sour cream slowly
  9. Scrap the sides and fold in
  10. Rub a large springform pan OR 2 9" pie plates with butter or nonstick spray, pour batter into pan
  11. Put the cheesecake in a 9X13 dish or a dish that can hold the pie plate, add 1/4" of boiling water under pie plate to create a water bath
  12. Don't open oven while baking for an hour (My oven usually needs 90 minutes but I start the timer at an hour)
  13. Should be slightly brown on top, use a toothpick to check
  14. Cool on counter for an hour then refridgerate
