My oldest daughter Chloe begs me to make this on a daily basis. Its the special meal I make when I know she needs a pick me up or on her birthday. Everyone loves it and I always make enough for left overs which never lasts long in our fridge! I got the outline of the recipe a bunch of years ago from a friend and just tweaked it till I got this recipe and I’ve stuck with this one for about 5 years now. What is your go to comfort meal of choice for you or your family?
Chicken and veggies with wine sauce
Chicken pieces with bacon and veggies in delicious white wine sauce, use it over rice and it makes for a very comfort food type meal
Begin by prepping all your ingredients. It makes the process go faster if your veggies are cut ahead of time.
Cut chicken into bite size pieces. add oil to a hot dutch oven, make sure to turn heat down to medium
add diced chicken in, cook for a minute then add some salt and pepper to the chicken. Chicken is done when the pieces are browned on the outside. Remove chicken onto a plate with paper towels on the bottom to soak up fat.
add in the bacon **My husband and I go back and forth on if you should cut the bacon before or after its cooked, I think its better to cut it first but either way works**
cook bacon for a couple minutes then add in the onion or shallots cook them together till bacon is crisp. You want the bacon to be a little crispier because it needs to hold the crunch in the sauce later
Remove bacon and onion from pot and put them with the chicken but keep 1/2 the liquid in the pot.
Add the veggies (zucchini and bell peppers) to the pot, stir and then add salt, and pepper. cook for 5 minutes until they start to become soft, add in minced garlic stir constantly for 45 seconds. remove into a large bowl,
leaving as much liquid in the pot as you can. (this bowl will hold the whole dish so make sure it is large enough)
Add the chicken, bacon, onion mixture to the same large bowl as the veggies.
Back in the pot add the wine and allow to cook down for a couple minutes. you want to whisk and scrap the bottom and sides of the pot to get the bites and pieces off the bottom.
add in the whipping cream, continue to whisk for a couple minutes till it starts to bubble
add in the chicken broth, whisk some more while adding in more salt and pepper. Also add in the garlic powder and Italian seasoning. Once it bubbles again scrape into the serving bowl over the chicken and veggies.
Mix it all together and serve over rice.
