I took a couple different recipes and made my own recipe out of them. I love what came out of my experimentation! Cauliflower rice is one of my new favorite food products. We get it from Trader Joes and I have heard that Green Giant also sells cauliflower rice in the frozen food section. I have tried to make it myself but it easier to just buy it. HA. What is your favorite food product, what sauce do you love, what do you make sure you never run out of in your kitchen?

Ingredients
- 2 bags Cauliflower Rice I buy mine from Trader Joes
- 1 famiy package boneless, skinless chicken thighs cut off fat, chop into small peices
- 1 whole yellow onion diced
- 3 cloves of garlic diced
- 1 bag frozen vegetables any mixture you want is fine, i stuck with peas, carrots, and beans
- 1/4 cup soy sauce we use low sodium
- 1 cup Chicken Broth we also use low sodium for this
- to taste salt and pepper
- 4 tablespoons oil - divided we used coconut
- 4 eggs beaten and ready to be scrambled

Instructions
- Begin by prepping the ingredients, dice the onion and garlic, and chop the chicken
- Heat the oil in a large enough pan, I used our cast iron pot
- Once oil is heated, add in the chicken and onions, season with salt and pepper and cook through
- When chicken is done cooking, about 10 minutes, remove from pot and add in more oil and the cauliflower rice. You want to cook the rice at a medium heat for about 10 minutes stirring occasionally.
- After 10 minutes add in chicken broth and cook down, Once the broth has been incorporated season with salt and pepper and add garlic, stir for 30 seconds
- Once garlic has had a chance to cook create a hole in the middle of the pan and add the eggs, Stir the egg mixture till it starts cooking and slowly incorporate into the rice.
- Add frozen vegetables and cover the pot for 5 minutes
- Once the vegetables have had a chance to cook add the chicken and onion back into the pot and finish off with the soy sauce. Let simmer for 5 minutes, Then serve hot
