A healthy twist on Shepherds Pie

Shepherds pie is one of my favorites, it is simple and easy to throw together. When I first started making it I did use the usual recipe which called for mashed potatoes, which I love, but as we started watching what we ate I also started slightly changing all our favorite recipes just a little to help with the eating healthy. Small changes can make a huge difference. I really enjoy messing with flavors as I have mentioned before and this is one of the recipes that I can do that with. As for leftovers we always have at least enough for a family of 4 and then enough for 2 lunches after. Its a great way to multi-plan for the week, I prefer to make dinners that I can also use as lunches for Dan. So I usually make a double recipe or at least double the meat. When looking at your recipes that you want to make keep in mind what job you or your husband are on, right now Dan just needs one lunch at work, but when he goes on his away from home trips I make sure that I double recipes so that I can use them in his big lunchbox. A healthy twist on Shepherds Pie
I have made shepherds pie the usually way, with potatoes, but ever since I started making mashed cauliflower I have decided to use the cauliflower in my shepherds pie, the other twist is using ground turkey instead of ground beef. I hope you enjoy.

Instructions
  1. Start boiling water for cauliflower in a big pot, pull out all seasonings and ingredients that you'll need
  2. Cut up cauliflower, put into boiling water
  3. Dice the read onion, pull out cream cheese so it can start to soften
  4. Put a tablespoon of butter into a large pan and start sweating the onion with a dash of salt.
  5. After 2 or so minutes add ground turkey and cook the meat through
  6. While the turkey is cooking drain the cauliflower in a colander, then use something heavy to press out even more water from the cauliflower.
  7. Once extra water has been pressed out, lay out cauliflower on paper towels and let air dry for about 5 minutes
  8. Add cream cheese and 2 tablespoons of butter to mixer, put cauliflower in mixer set it to about 4 and mix for 2 minutes
  9. Stop mixer add 1 tsp salt and pepper(more to taste if you want), 1 tablespoon garlic powder, 1 tsp smoked paprika, 2 tsp onion powder and start mixer again for 2 minutes, scrap down the sides
  10. Add 1/4 cup milk, and entire package of shredded cheese. Start mixer again, set it at 2 and let it mix until you have put vegetables in with the turkey
  11. While the cauliflower is mixing, drain ground turkey well, and pre heat oven to 375
  12. After drained add in 1 tsp salt and pepper(more to taste if you want), 1/2 tablespoon garlic powder, 1/2 teaspoon smoked paprika, and 1 tsp italian seasoning. Stir and simmer for 5 minutes, while simmering stop the cauliflower mixer.
  13. Add frozen vegetables mix in and let it cook for a couple minutes
  14. Once everything is mixed together, pour turkey/veggies mixture into casserole dish, then top with cauliflower mixture
  15. Spread cauliflower out evenly, this is where you would add extra cheese or paprika if you choose to.
  16. Put casserole dish in oven, uncovered for 25 minutes. Remove let cool for 5 minutes and then Enjoy!
  17. ****I do also make gravy for over the top sometimes, its good but not necessary
